International Tatting Day is April 1st, coming up soon. Many people also like to eat chocolate on Tatting Day. As I gave up sugar a few years back, traditional chocolate is not an option for me.
I did, however, just create something today that does not make me feel guilty, but it tastes so good it SHOULD! I thought I would share it.
In a small glass measuring cup or other microwaveable dish/cup, place the following items.....
1 tablespoon 72% cacao chocolate chunks (yes, technically these have sugar in them, but this is the good kind of chocolate, so I splurge sometimes)
1 tsp honey
1 tablespoon or 1 1/2 tablespoons Sun Butter
1-2 tablespoons water
Place the cup/dish in the microwave and heat for 10 seconds, check, then another 6 seconds.
Stir with a spoon, slowly at first and then as fast as possible, until the mixture becomes a smooth butter in the bottom of the glass. Keep stirring for a few seconds. It amazes me how this happens, separate items transforming into a smooth butter that resembles butter cream frosting!
Just a couple tablespoons of this stuff is enough of a dessert for lunch and will definitely be on my menu for this coming International Tatting Day!
